Awesome, I hope you have some fun with that and find some nice coins for your collection. If you are interested, there is guide put together by Aussie Coins And Notes on what is ‘worthwhile’ to find in terms of errors and low mintages. I am not sure if there are any in French anywhere online.
Of course, if you are just looking for commemoratives and coloured coins this guide will not be of much help, but it is quite comprehensive:

Keep us updated with how it goes and what you find, I am sure we would all like to see pictures of your trip and what coins you find. 😃
Hi,
Thanks for the link,it could be interresting.
First I will look for “obvious” coloured and commemoratives first.
I have been told that it could be complicated for a foreigner to simply enter into a bank , and ask for rolls. Could you tell me about this, please? Any place it could be easy to have rolls, to recommand?
Thanks
We visited the opera, CBD, chinatown (firework for new year)… and more to come…
