I would like to get a few sets of the Venezuelan new notes and the ones they replaced. Preferably in UNC condition.

Most would like. Despite being inflationary banknotes, they are really nice (the replaced ones).

​I keep seeing bundles and bundles of them. As I understand, the original ones and the new ones are exactly the same except for the denomination...
